Monday Menus

My menu last week worked well! Several times I referred back to it. The menu helped me stay on track. It also helps me realize I can make it another week without going to the store. Hopefully! :-)

Monday:

    Breakfast: Scrambled egg, small bit of potato, 1 hotdog, kale (FG)
                                              Low carb milk (for husband)
     Lunch:  Hot Link into 1/2 sandwich (husband), I had peanuts, hamburger
     Dinner: Used a gift card from my husband's birthday to eat out. FUN! 

Tuesday:  
     Breakfast: Low carb muffins with coconut milk shake (berries FG)
     Lunch:      Cuke, red onion, avocado salad, boiled egg with Italian Dressing
     Dinner:     Spaghetti sauce over spaghetti squash, broccoli (FG)

Wednesday: 
     Breakfast:  Scrambled eggs with turkey bacon
     Lunch:      Chicken and Kale Soup
     Dinner:     Barbecued Chicken, yam, fresh steamed green beans with garlic

Thursday: 
     Breakfast:   Low carb pancakes (extra fried egg for husband)
     Lunch:        Chicken and Kale (FG) Soup
     Dinner:       Spaghetti sauce over spaghetti squash (FG)

Friday: 
     Breakfast: Scrambled eggs, potato, hot dog, kale
     Lunch:     Hot dog sandwich (husband), cuke salad (red onion, avocado, hot dogs) (me)
     Dinner:    Mackeral patties, fresh steamed green beans (FG) with garlic, 1/2 potato

Saturday: 
     Breakfast:  Low carb pancakes
     Lunch:  Chicken sandwich (husband), chicken salad for me
     Dinner:   Chile Rellenos  (FG)

Sunday: 
     Breakfast:   Low carb shake (berries FG)
     Lunch:      Chile Rellenos
     Dinner:     Fish and fried okra (FG)

FG= From our garden

Snacks: Low carb apricot tarts, sunflower seeds, carrots and ranch, apples, coconut milk Popsicle

  1. I love this menu--so creative and also healthy. I imagine you finding ways to use whatever is in your hands from garden, gifts or sale items. Great example for other women to see this. :) I think learning how to cook and continually trying new things and new recipes-- is absolutely a key thing in hard times---which I can't imagine any way many of won't be in that place in time, if not already. One thing you said here that struck me in particular--"I can make it another week without going to the store". I was so happy last week to be able to lend my jeep to my daughter when hers needed repair. All I needed was some coffee and she gave me a big can--I didnn't need to have her take me shopping or pick anything else up. I haven't got a very big pantry--but there was enough here to more than handle a week. Anytime we can stay at home we are saving money. :)

    1. I'm glad you thought my menu was creative. Perspective helps because I thought it may be boring. I did end up getting some cabbage to make coleslaw and also sauteed a chunk for breakfast. I couldn't stick to low carb if I didn't try new recipes.

  3. Thank you for sharing your low carb menu plan! It's very helpful as we continue to eat low carb. Would you mind sharing your recipes for low carb biscuits, and the low carb breakfast smoothie?? I would appreicate it very much!

    1. I haven't forgotten about your request Lynn. I pulled the recipe to type but just haven't had time yet. Soon. The low carb smoothie is easy. I have a Magic Bullet my daughter gave me. I put coconut milk (unsweetened) in with frozen berries and blueberries (1/2 cup or less), a little Stevia, vanilla. When I can afford it I may add a scoop of egg white protein powder and sometimes I've added a tablespoon of egg white powder. Does that help?

    2. Thanks Georgene! I'm sure this will add some variety to our breakfasts. Since we raise our own chickens I think I'll add an egg in with ours. I appreciate you sharing your recipe.
