Monday Menu

I have two and half more weeks until payday with $45 dollars left in my grocery account. I definitely need a new plan! Next month I'm going to TRY and divide my grocery money between 3 weeks while spending 2 weeks worth in the beginning of the pay period.  Meanwhile, I keep praying and looking for ways to stretch the money I have left. My plan will be no stocking up on sales but only using the money I have left for necessities like meat and vegetables.



So here is the menu I pulled together from what I have on hand.  

Monday
Breakfast: Low carb pancakes
Lunch: Beef stew and half bologna sandwich (husband), no bread for me
Dinner: Low carb chili and coleslaw

Tuesday
Breakfast: Scrambled eggs and bacon
Lunch: Beef soup and half turkey breast sandwich (husband), no bread for me
Dinner: Barbecued chicken, sweet potatoes, green beans in garlic

Wednesday
Breakfast: Low carb bluberry muffins and smoothie
Lunch: Sauteed hot dogs with onion and celery in butter
Dinner: Low carb chili

Thursday
Breakfast: Low carb pancakes
Lunch: Beef stew and half egg salad sandwich, no bread for me
Dinner: Barbecued chicken, red potatoes and green beans in garlic

Friday
Breakfast: Eggs, small bits of potato, onion, garlic and kale (cheese added for husband's part)
Lunch: Vegetable soup and half turkey breast sandwich, (no bread for me)
Dinner: Spaghetti squash and homemade spaghetti sauce

Saturday
Breakfast: Omelet
Lunch: Mexican soup and half bologna sandwich, (no bread for me)
Dinner: Fried fish, fried okra and sweet potatoes

Sunday
Breakfast: Low carb orange pecan muffins with low carb smoothie
Lunch: Mexican soup and half turkey breast sandwich, (no bread for me)
Dinner: Spaghetti squash and homemade spaghetti sauce

Snacks: boiled eggs, Low carb fruit tarts, sunflower seeds, almonds (for husband),

  1. This is a great menu. Can you eat lentils? I'm not sure how low carb they are, but I use them as a meat substitute a lot. They are usually only $1.00 a bag. Also, I sprout mine so each day I come back, they've grown and there's more - like a magic bowl off food!

    1. We try to stay away from beans because of the high carb dount. I'll throw a few into my soups every now and then. How do you use the sprouted lentils? Do you use them instead of lettuce?

  3. I make my own detergent for most things but for some I buy detergent. The cap comes and most people pour it full. If you look there are almost invisible markings showing you how m much to use. One one I opened today you use less than a half inch of detergent. I also fill a spray bottle with half water and half fab soft then I spray a quarter washcloth (cut up from old ones) with the fab soft. Works very well, would rather have money than scented clothes. A bottle of cheap fab. soft lasts for a long time!

    1. Yes, I use the cheap fab. softener, too. I buy mine at the dollar stores. I use just a little bit in my towels. I also make my own detergent, too. Thank you Dora for your comment.

  4. I hope your stores feature what you need on sale in the next couple weeks. You have a tricky job ahead but if anyone can do it, I know you can. I have a hard time when trying to do low carb. Right now, husband is supposed to have high protein and it is weird because I don't like to cook big servings of meat. But I guess when their is a medical reason to do something, we figure it out and do it.

    1. I was SO BLESSED because Food 4 Less had 10 pounds of chicken on sale for. 58 cents a pound. This saved me $3.00 a bag. I just wish I had more room in my freezer to buy more bags.

  5. I just stumbled on your site and really enjoyed it. A cheap and low carb dinner that I often make in the crockpot is sausage and cabbage. Slice up a head of cabbage, 2 cups chicken broth (homemade is the best!), 1/2 sliced onion, salt, pepper, sliced sausage links - I often get them from the butcher counter for $1 each. If you have some white potatoes around, you can add them in for anyone that eats carbs.

  6. Your menu sounds good, just very tight, both moneywise and foodwise. What do snack on or have for desserts?

    1. For snacks we eat hard boiled eggs, sunflower seeds, pork rinds (Dollar Store), minimal low glycemic fruit, peanut butter on celery, low carb muffins, low carb tarts, low carb treats.
