Monday Menus

I'm going to TRY and start posting my week's menu each Monday. I'm not sure if I'll meet the challenge.. but I'm going to try! I'm hoping  it will help to cut down on waste in my kitchen and extra trips to the store.



Monday: 
Breakfast: Scrambled eggs with leftover cauliflower, 1/8 of a Linguica, chopped chives and 1/2 potato
Lunch: Tortilla Soup (minus the tortillas)
Dinner: Barbecued chicken, 1/2 yam each, fresh green beans sauteed with onion and garlic


Tuesday: 
Breafkast: Low Carb Coconut Flour pancakes, fried egg (husband only)
Lunch: Egg salad sandwich (husband), lettuce salad with boiled eggs (me)
Dinner: Spaghetti squash with homemade Marinara Sauce and hamburger


Wednesday:

Breakfast: Chorizo and scrambled egg in low carb tortilla
Lunch:  Kale (FG) and sausage soup
Dinner: Meatloaf (Frozen from last week), 1/2 potato, green beans



Thursday: 
Breakfast: Low carb muffins with fruit smoothie
Lunch: Hot dog sandwich (husband), salad with hot dogs (me)
Dinner: Leftover spaghetti squash with homemade Marinara sauce and hamburger

Friday:
Breakfast: Low carb biscuits and gravy
Lunch : Kale(FG) and sausage soup
Dinner: Fried fish, fried okra (FG)

Saturday:
Breakfast: Low carb biscuits and gravy
Lunch: Low carb pepperoni pizza
Dinner: Barbecued chicken, 1/2 yam each, leftover fried okra



Sunday:
Breakfast: Fruit Smoothies and low carb muffins
Lunch: Chicken sandwich (husband), chicken salad (me)
Dinner: Low carb tacos

Snack choices include sunflower seeds, coconut milk popsicles, SF snowcones, apples, strawberries(FG), raspberries (FG), Low carb apple crisp

As you can see our meals are pretty simple. Our food choices are limited due to food allergies, low carbing and our budget. But, we are content and satisfied.

  1. I have such a difficult time with my grocery money appropriation. I appreciate reading about how you do your budgeting yet still making satisfying meals.

  2. I don't remember what my meal plans for this week are off the top of my head, but we had homemade tomato soup and tortillas for supper. My older boy LOVES "red" soup, and he actually cries if I choose to cook a different kind of soup instead of his favorite "red" soup! Last time I made soup it was white bean and kale soup, so I really did need to give him "red" soup tonight!

  3. Your menu looks good and it looks healthy. Kudos to you for preparing one. I'm afraid it is still something I cannot do but would likely save me a lot of time in thinking, preparing and shopping. I keep thinking...some day :-0

  4. Georgene, Thanks for posting your meal plans. It will be a great help to me since my husband and I recently began eating low carb. I'll share a few of our recent suppers: Last night I cooked hamburger steak with sauteed onions and mushrooms and provolone cheese, green beans (and cooked some homemade mac & cheese to add to my son's plate too). The night before, I cooked a turkey breast in the crockpot... so we had turkey and a salad. That gave me lots of turkey leftover for a turkey salad, more to eat as a main course, and I am cooking the carcass down today for turkey vegetable soup. Several nights ago we had a Southwest Chicken Salad with mixed salad greens, sauteed chicken, avocado, and a little tomato and black beans sprinkled over and a homemade dressing. And the night before that we had scrambled eggs, sausage, and some sliced cheddar cheese (my husband and son also had a slice of toast with theirs). I have a new recipe for low carb chicken cordon bleu casserole that seems very easy that I will try sometime this week too. Almost all of my ingredients came from Aldi and were low-priced. Our meats our usually purchased in bulk on sale at a small local grocery store. They have great sales once in a while and I will stock the freezer. We have our own fresh eggs since we raise a small flock of chickens. Our problem is coming up with low carb breakfasts for my husband. Do you have any suggestions for that? I would love it if you would share your recipe for your low carb biscuits & gravy!
