I bought a small package of pork cubes for $1.99 a pound. I decided to stretch it by making Chile Colorado so I went to one of my favorite recipe sites called ALL RECIPES and did a search. I use this site weekly and have made so many of it's recipes. I look for recipes that have high ratings and I normally read the reviews and take their advice if enough of them agree.
This recipe ROCKS! It was easy and very inexpensive to make. I used some dried chiles we grew a few years ago and the flavor was great. It tasted like something you'd eat in a restaurant.
There is a copyright on the recipe so I don't think I can post it here. I've added the link. I did need to watch over the recipe as it was simmering and added more beef stock.

I haven't looked at the recipe yet, but the picture you posted looks so yummy! Mexican food is my favorite, and even though I make tacos and burritos at home, there is just something about the Mexican restaurants that are so much better! I also have not heard of this dish, but will have to give it a try.
