Another thing I do is keep a bag of soup scraps in my freezer. This is for making stock so i put in it, onion skins and ends, carrot ends, celry roots, any scrappy veggie peeling. Not very apetizing? Oh yes it is!! Just add some chicken or beef or pork bones, and water and seasoning and this all cooks up to a wonderful stock for use in all sorts of meals and soups! Yummy--'garbage soup' is something my kids are used to seeing and appreciate well.
